We got our first Calphalon Commercial Hard-Anodized 12-Inch Everyday Pan in 2003, as one of the Amazon daily specials. It has proven to be the most often used pan in the cupboard. It has been more than worth the price. Buy one for yourself.

I noticed that some reviewers comment that this is not a non-stick pan. While that’s true, I’ve never had any difficulty cleaning it. A souring pad is needed sometimes, but using enough oil — a tablespoon of olive oil, for instance — is the key.

Don’t make the mistake of letting the pan overheat. I did, and the pan is now slightly warped on the bottom and does not sit flat on my glass cooktop. So I just bought another one today. The first pan is still useful in the oven.

This is a great digital thermometer. I’ve used it for making brittle, and it came out perfectly. You simply select the presetting that you want, and the thermometer beeps when the correct temperature is reached. This is far easier than having to continually look at a thermometer to determine when the correct temperature is reached, especially since candy-making is a pretty precise science.

The product could certainly be improved however. It would be nice to simply be able to set the temperature that you want and have it beep when you reach that temperature. While the presettings are nice, they don’t necessarily encompass all needs. Additionally, the text/images on the screen are pretty small and difficult to read. While this isn’t a huge deal since the thermometer gives you an auditory warning when the right temperature is reached, bigger text and images would be preferable.
